Michael Pollan's book, In Defense of Food is an amazing in-depth review of the American diet and targets what we need to do to get back to basics of pure food and pure diets, without all the hype and non-nutritional fillers.

Pollan's slogan —"Eat food. Not too much. Mostly plants." is a simple and profound summary of what is needed to improve the health of everyone who eats (and of course that does not exclude anyone!). Buy this book for a great read and nice addition to your library.

Quinoa is gluten free and has a low glycemic index. The only issue with eating quinoa for some people may be that if they have an allergy to oxylates, which is also in spinach and some vegetables, then they should know that quinoa has oxylates in a natural form.
